I started with my bevel jig that I sell and a 1x30. Learning the process and angles with the jig helped me progress to freehand grinds. I did at least 250 knives on the angle grinder machine, and many thousands on the 2x72 version. The 2x72 version was actually more dangerous than the angle grinder version. It only works for scandi-type bevels that have a fairly wide flat section on the blade. It also only works blades without any recurve sections.

Don't be lazy. When flipping the file guide over to do the other side of the blade, don't leave the angle set. Bring the top plate forward again. Start by taking the corner off, then slowly bring the plate up towards you. This again brings the grind line down towards the spine. Give it time also on this side. Then they will match.
